Chocolate in Cyprus

Σοκολάτα με Κανταΐφι και Πραλίνα Φυστικιού Η διάσημη σοκολάτα από το Ντουμπάϊ η οποία αγαπήθηκε γρήγορα από χιλιάδες κόσμο! Γίνεται πανεύκολα, με λίγα και απλά βήματα και είναι πραγματικά εντυπωσιακή! Σε αυτή την συνταγή δεν υπάρχουν συγκεκριμένες μετρήσεις αφού εξαρτάται από την φόρμα την οποία θα χρησιμοποιήσεις, εγώ χρησιμοποίησα μακρόστενη φόρμα σιλικόνης για κέικ για την όποια χρησιμοποίησα τα πιο κάτω γραμμάρια. ΥΛΙΚΑ: ▫️80 γρ. ψιλοκομμένο κανταΐφι ▫️3 κ.σ πραλίνα φυστικιού ▫️2 κ.γ ταχίνι ▫️250 γρ. κουβερτούρα γάλακτος (μπορείτε να σμίξετε και μαύρη σοκολάτα αν θέλετε) ▫️λίγο βούτυρο (αλατισμένο η μη δεν έχει σημασία) ▫️λίγη άσπρη κουβερτούρα + Χρώματα ζαχαροπλαστικής (προαιρετικά για αισθητικούς σκοπούς) ΕΚΤΕΛΕΣΗ: 1. Τσιγαρίζουνε το κανταΐφι με λίγο βούτυρο μέχρι να ροδοκοκκινίσει. 2. Το μεταφέρουμε σε ένα μπολ και προσθέτουμε την πραλίνα φυστικιού και το ταχίνι και ανακατεύουμε καλά, το μείγμα μας δεν πρέπει να είναι πολύ ρευστό αλλά ούτε στεγνό, αν δούμε ότι είναι στεγνό προσθέτουμε ακόμα λίγη πραλίνα φυστικιού για να το φέρουμε στην σωστή σύσταση. 3. Προαιρετικό βήμα: Λιώνουμε λίγη άσπρη σοκολάτα και την χρωματίζουμε με χρώματα της επιλογής μας. Χρωματίζουμε με ένα μικρό κουταλάκι τον πάτο της φόρμας μας. 4. Λιώνουμε την μισή ποσότητα από την κουβερτούρα γάλακτος και την βάζουμε στην φόρμα δημιουργώντας μια όχι πολύ λεπτή αλλά ούτε χοντρή στρώση. 5. Με ένα πινέλο βάζουμε σοκολάτα στα τοιχώματα δίνοντας ύψος στην σοκολάτα μας για να μην έχει κενά. Την βάζουμε στο ψυγείο να παγώσει. 6. Αφού παγώσει προσθέτουμε το μείγμα από το κανταΐφι απλώνοντας το ομοιόμορφα. 7. Λιώνουμε την υπόλοιπη κουβερτούρα και την προσθέτουμε πάνω από το μείγμα καλύπτοντας όλα τα κενά. 8. Την βάζουμε στο ψυγείο μέχρι να παγώσει. Like us, you’ve probably seen this chocolate bar from @fixdessertchocolatier on Social Media before and we just had to try it! Verdict: we can’t get knafeh of it 🤭 Ingredients: • 60 gr kataifi • 50 gr. white chocolate • 200 gr. milk chocolate • 70 gr pistachio butter • 1 teaspoon tahini • 1 tablespoon butter *You’ll also need a chocolate mould, and based on its size you can adjust the quantities accordingly. Begin by melting both the white and milk chocolate in the microwave or over a double boiler. Brush some of the white chocolate on your chocolate mould (this is just for decor and you can skip it). Pour some of the milk chocolate in the mould to cover the base and the sides. Pour the excess chocolate out of the mould and chill for about 20’, until the chocolate gas thickened. Cut the kataifi in small pieces and cook it in the butter on medium-to-low heat until golden brown. Add the pistachio butter, the remaining white chocolate and tahini and mix well. If the mixture seems dry add some more pistachio butter until it has the right consistency. If you want it to be extra sweet you can use pistachio spread instead of pistachio butter or add a bit of icing sugar. Spread the kataifi mixture on top of the chocolate in the mould and cover with the rest of the milk chocolate. Biscoff Brownies Είναι τα πιο νόστιμα, σοκολατένια, μαστιχωτά brownies που θα φτιάξετε ποτέ σας! Έχουν πλούσια γεύση και θα ξετρελαθούν όλοι όσοι τα δοκιμάσουν! ΥΛΙΚΑ: ▫️200 γρ. κουβερτούρα ▫️200 γρ. βούτυρο ανάλατο ▫️250 γρ. καστανή ζάχαρη ▫️4 αυγά ▫️35 γρ. σκόνη κακάο ▫️90 γρ. αλεύρι για όλες τις χρήσεις ▫️200 γρ. σταγόνες κουβερτούρας ▫️150 γρ. μπισκότα Biscoff, σπασμένα ▫️200 γρ. άλειμμα μπισκότου Biscoff ΕΚΤΕΛΕΣΗ: 1. Προθερμαίνουμε τον φούρνο μας στους 180ºC στον αέρα. 2. Λιώνουμε την κουβερτούρα μαζί με το βούτυρο σε μπεν μαρί (η στον φούρνο μικροκυμάτων) και το βάζουμε στην άκρη για να κρυώσει ελαφρώς. 3. Σε ένα μίξερ χτυπάμε καλά τα αυγά με την καστανή ζάχαρη μέχρι να γίνουν ένα πηχτό μείγμα (θα γίνει πιο ανοιχτόχρωμο). 4. Προσθέτουμε στο μείγμα την λιωμένη σοκολάτα και ανακατεύουμε απαλά με μια σπάτουλα. 5. Βάζουμε το κακάο και το αλεύρι και ανακατεύουμε καλά. 6. Προσθέτουμε τις σταγόνες σοκολάτας και τα σπασμένα μπισκότα και ανακατεύουμε. 7. Σε ένα τετράγωνο ταψί (22,5×22,5) στρώνουμε αντικολλητικό χαρτί και προσθέτουμε το μείγμα απλώνοντας το ομοιόμορφα. 8. Λιώνουμε το άλειμμα μπισκότου σε μπεν μαρί (η στον φούρνο μικροκυμάτων), το αφήνουμε λίγο να κρυώσει και το ρίχνουμε πάνω από το μείγμα. Με ένα μαχαίρι κάνουμε βαθιές ραβδώσεις ώστε να μπλέξουμε το πάνω μείγμα με το κάτω. 9. Ψήνουμε για 25-30 λεπτά. Πανεύκολο παραδοσιακό Μωσαϊκό, γνωστό και ως κορμός μέσα σε μόλις λίγα λεπτά. Μια νόστιμη συνταγη που θα λατρέψετε αφού η διαδικασία είναι πολύ πιο εύκολη και γρήγορη. Μια συνταγη που θα λατρεψετε αφού θα μάθετε να κάνετε τον κορμό με ένα πιο ασυνήθιστο τροπο, πολύ πιο νόστιμο και γρήγορο. Για αυτή την συνταγή χρησιμοποίησα μπισκότα τύπου πτι μπερ της γαλλικής εταιρίας LU τα οποία θα βρείτε στα καταστήματα @foodhaus.cy η online στο e.shop τους foodhaus.com ΥΛΙΚΑ: ▫️450 γρ. μπισκότα LU πτι μπερ ▫️250 γρ. γάλα Χαραλαμπίδης-Κρίστης ▫️125 γρ. βούτυρο ανάλατο Lurpak τεμαχισμένο ▫️100 γρ. Καρυδόψιχα καρπός ▫️180 γρ. ζάχαρη λευκή, κρυσταλλική ▫️60 γρ. κακάο, σκόνη ▫️30 γρ. κονιάκ ΕΚΤΕΛΕΣΗ: 1. Σε ένα μπολ σπάμε με τα χέρια μας τα μπισκότα σε μικρά ακανόνιστα κομμάτια. 2. Προσθέτουμε την καρυδόψιχα και την σπάμε σε μικρά κομμάτια. 3. Στη συνέχεια, σε μια κατσαρόλα βάζουμε το γάλα, τη ζάχαρη, το βούτυρο και την τοποθετούμε σε μέτρια φωτιά. Ανακατεύουμε ωσότου το βούτυρο και η ζάχαρη λιώσουν (Προσοχή, δεν θέλουμε να βράσουν). 4. Προσθέτουμε το κακάο και το κονιάκ και ανακατεύουμε. 5. Αδειάζουμε το μείγμα πάνω από τα μπισκότα και την καρυδόψιχα και ανακατεύουμε καλά. 6. Απλώνουμε το μείγμα σε μια λαδόκολλα και τυλίγουμε σε ρολό. Εξωτερικά τυλίγουμε με μεμβράνη και τυλίγουμε στις άκρες σαν καραμέλα για να δώσουμε ακόμη πιο ωραίο σχήμα. 7.
