Μαστιχόματα 2020 Quarantine Edition! These traditional Easter Breads with Mastic Aroma and a fluffy inside are to, well lets say break your diet for! Traditionally eaten as is, but I like mine with a layer of Nutella & Marscapone cheese 🤤 #eimeliksis • • Ingredients For the yeast starter * 2 cups warm milk * 4 sachets instant dried yeast * 2 cups of flour • • We need 2 kilos All purpose flour for the whole recipe For rest of loaf * 8 eggs * 500gr unsalted butter * 2 cups sugar * 1/2 tsp ground mahleb * 1/2 tsp ground mastic * Remainder of flour from the 2 kilos • To top * 1 egg mix * Vanilla sugar as desired * Almond flakes as desired • • Instructions• • In a large bowl mix together the warm milk with yeast give a good stir and then add 2 cups of sift flour. And stir again. Cover with cling film and leave to rest for 1 hour • Now that your yeast starter is ready, we add beaten eggs, melted butter, sugar, mastic, mehlepi & the rest of the flour. Mix thoroughly and knead the dough with your hands. Cover with cling film and a towel on top. Let it rest for 4 hrs • Now, tip the dough onto a clean surface and knead for around 5 minutes to stretch the dough. Cut in 6 equal pieces • Each separate piece, slice into 3 logs, and braid your easter bread • Transfer the easter breads to the baking trays, brush with the egg mix, sprinkle vanilla sugar and decorate with almonds on top • Set aside in a slightly warm place for a good 3 hours until it has doubled in size • Preheat oven to 160C. RECIPE ALERT 🚨 👇🏻 IF AKIS* CAN DO THEM, THEN SO CAN I! (*petrezikis) • CINABBONS MY WAY INGREDIENTS : • -Dough- 1/2 cup warm water 1/2 cup sugar 1 sachet instant yeast 1/2 tsp salt 75gr unsalted butter 2 beaten eggs 1 vanilla 200gr warm milk 5 cups all purpose flour • -Filling- 75gr unsalted butter 3/4 cup brown sugar 2 tbs cinnamon • -Frosting- 150 grams cream cheese 100 gr soften unsalted butter 4 tbs icing sugar 1 vanilla Dash of milk EXECUTION Put water sugar & yeast in large bowl. Leave to rest 10min for yeast to activate. Now add the salt, melted butter, beaten eggs, vanilla & milk. Give a good stir. Then add the flour. Knead it for 5 minutes. Then put in a greased bowl and cover with cling film. Leave it rest for an hour so it can rise. Take your dough and put on counter and roll it with a rolling pin, 60cm wide and 30cm height. For the the filling, spread the butter on the dough, then mix cinnamon & sugar together, and sprinkle on top of the buttery dough. Now roll the dough, and form a 60cm log. Then with a knife, cut them about 2.5cm wide each. Place them in your baking tray, cover them with cling film and let them rise for another 30min. Oven should be pre heated at 180 degrees Celsius and cook them for 15-20 min till golden brown. For the frosting combine all ingredients in a mixer. Take them out of oven. And put the frosting on top. Of you like more frosting than the ones in the photos above, just double your frosting portions according. Also add more cinnamon if you like it more spicy, but beware not too much cause it has reverse effect. Maybe try half a teaspoon more, and each time you make add half more again till you get your desired amount! Also check youtube for rolling cinabbon techniques! 🥁 Drumroll.....
