New spot for pasta lovers in Nicosia, serving homemade pasta for a quick lunch or casual bite. The beef ragu was super tender and the pink sauce pasta had the perfect kick. Everything we tried was delicious with our favorite being the Porto Bello pasta with a hint of truffle! We also tried the creamy salmon pasta with avocado from the secret menu, perfectly creamy for those who love salmon. They also serve pizza but we’ll save those for next time! This cuttlefish orzo recipe really surprised us with how delicious and easy it was to make; we'll definitely keep making it again and again! Keep reading for the recipe (serves 2) ⬇️ Orzo ingredients: -1 cup orzo pasta -2 cups chicken stock -1 medium onion finely chopped -2 cloves of minced garlic -1/2 cup Edesma frozen peas -1/3 cup of white wine -1 tbsp of tomato paste -2 tbsp olive oil -Lemon zest -Salt -Pepper Cuttlefish ingredients: -400 gr. Edesma Cuttlefish -2 tbsp. olive oil -Lemon zest -Red pepper flakes (optional) -1 clove of garlic -Salt -Pepper -Olive oil, lemon and parsley for serving Cooking instructions: Start by marinating the cuttlefish in 1 tbsp. olive oil, lemon zest, red pepper flakes, garlic and pepper for one hour. To prepare the orzo, cook the onion and garlic in the olive oil on low heat until tender. Add the orzo and cook for a few minutes until slightly toasted. Add the white wine and stir until evaporated. Add the tomato paste, frozen peas, lemon zest, salt and pepper and continue by adding the chicken stock gradually until cooked. To prepare the cuttlefish, score the cuttlefish diagonally so it doesn't curl up while cooking. Heat 1 tbsp of olive oil in a pan and add the cuttlefish, cooking it for 2-3 minutes on each side. When ready, add the cuttlefish on top of the orzo and sprinkle with salt and lemon, olive oil and parsley.
