You can get everything you need to make this at @alphamegacy Υλικά: 150 γρ. ντοματίνια 1 κ.γ. ελαιόλαδο 1 σκελίδα σκόρδο, ψιλοκομμένη 1 μέτριο κρεμμύδι, ψιλοκομμένο 1 κ.σ. πελτέ ντομάτας 250 γρ. ζωμό λαχανικών 200 γρ. κριθαράκι 1 κ.σ. γιαούρτι ⅓ ποτηριού γραβιέρα Νάξου, τριμμένη 1 ποτήρι ψιλοκομμένο σπανάκι Αλάτι & πιπέρι Εκτέλεση: Σοτάρουμε το κρεμμύδι στο ελαιόλαδο, σε χαμηλή προς μέτρια φωτιά, για 2–3 λεπτά μέχρι να μαλακώσει. Προσθέτουμε τα ντοματίνια και ανακατεύουμε μέχρι να αρχίσουν να μαλακώνουν και αυτά. Προσθέτουμε το σκόρδο και τον πελτέ ντομάτας και ανακατεύουμε για λίγο. Στη συνέχεια, ρίχνουμε το κριθαράκι και ανακατεύουμε καλά. Προσθέτουμε τον ζωμό λαχανικών, αλατοπιπερώνουμε και αφήνουμε να μαγειρευτεί σε χαμηλή φωτιά μέχρι το κριθαράκι να είναι σχεδόν έτοιμο. Προσθέτουμε το ψιλοκομμένο σπανάκι και μαγειρεύουμε για ακόμη 2–3 λεπτά, μέχρι να μαλακώσει και να ψηθεί εντελώς το κριθαράκι. Αποσύρουμε από τη φωτιά και αφήνουμε για 1–2 λεπτά να κρυώσει ελαφρώς. Προσθέτουμε τη γραβιέρα Νάξου και το γιαούρτι και ανακατεύουμε καλά. Σερβίρουμε και απολαμβάνουμε!

Say hello to @aya.cooks.cy , the newest addition to the Limassol food scene! ✨ They’ve only been open a few weeks, and we finally got to visit - here’s what we tried: • Gallagher brioche bread with tahini & sjüg • Roasted beetroot salad • Hummus • Charred cauliflower with tahini, pomegranate, pistachios & dried roses • Za’atar Cyprus potatoes cooked two ways • Chicken skewer with harissa BBQ & za’atar • Hallah French toast with seasonal fruit & labneh cream We were told after our visit (classic 😅) that the Black Angus beef short rib is one of their best dishes - so that’s definitely on our list for next time!
