Summer is here which means it’s time to make Cyprus’ most popular summer dessert - a refreshing mahallepi served with Agros Rosewater, a product with Protected Geographical Indication. The EU quality schemes (PDO, PGI and GI) are European certification systems, supported through the Common Agricultural Policy and implemented at national level through the CAP Strategic Plan 2023–2027 in Cyprus. These schemes contribute to strengthening farmers’ position in the food value chain and improving the competitiveness of agricultural products. By promoting products such as Agros Rosewater (PGI), these instruments support producers in differentiating their products, achieving higher market value and preserving traditional know-how, while offering consumers high-quality food with guaranteed origin and authenticity. Ingredients (serve 2): 2 tbsp maze starch 2 cups water (to serve/per serving) 1 tbsp Agros Rosewater PGI 2-3 tbsp Rose Cordial 1/3 cup iced water a few ice-cubes (optional) Mix the water with the maze starch in a pot and stir well to dissolve the starch. Make sure the water is cold. After it is completely dissolved, heat the pan on medium heat until it comes to a boil, stiring constantly for a few minutes until the mixure thickens. Pour the mixure into two small bowls (lightly coated with water to prevent sticking), let them cool down and place them in the fridge overnight.
