Κρεμώδες Κριθαράκι με Λεμονί, Σπανάκι & Γαρίδες Ένα μεσογειακό, αρωματικό πιάτο, πλούσιο σε γεύση και έτοιμο στο πιάτο σας σε λιγότερο από 30 λεπτά. ΥΛΙΚΑ: ▫️250 γρ. κριθαράκι θρίαμβος ▫️250 γρ. γαρίδες, καθαρισμένες ▫️25 γρ. βούτυρο ▫️1 κρεμμύδι, ψιλοκομμένο ▫️4 σκελίδες σκόρδο, λιωμένες ▫️¼ κ.γ αποξηραμένο θυμάρι ▫️25 ml λευκό ξηρό κρασί ▫️500 ml ζωμό λαχανικών ▫️125 ml κρέμα γάλακτος ▫️75 γρ. σπανάκι baby ▫️χυμό & ξύσμα από 1/2 μικρό λεμόνι ▫️30 γρ. παρμεζάνα, τριμμένη ▫️λίγο ελαιόλαδο για το σοτάρισμα των γαρίδων ▫️αλάτι & φρεσκοτριμμένο πιπέρι ΕΚΤΕΛΕΣΗ: 1. Σε ένα μεγάλο τηγάνι, ζεσταίνουμε λίγο ελαιόλαδο σε μέτρια φωτιά και σοτάρουμε τις γαρίδες για 3-4 λεπτά. Τις αλατοπιπερώνουμε και συνεχίζουμε το σοτάρισμα μέχρι να εξατμιστούν τα υγρά τους. Στη συνέχεια τις αφαιρούμε από το τηγάνι και τις αφήνουμε στην άκρη. 2. Στο ίδιο τηγάνι, λιώνουμε το βούτυρο και σοτάρουμε το κρεμμύδι για περίπου 1 λεπτό. Προσθέτουμε το σκόρδο και συνεχίζουμε για άλλα 30 δευτερόλεπτα. Ρίχνουμε το αποξηραμένο θυμάρι, ανακατεύουμε καλά και προσθέτουμε το κριθαράκι. Το σοτάρουμε για 1 λεπτό ανακατεύοντας συνεχώς. Στη συνέχεια σβήνουμε με το κρασί, ανακατεύοντας μέχρι να εξατμιστεί το αλκοόλ. 3. Χαμηλώνουμε τη φωτιά και προσθέτουμε τον ζωμό. Σιγοβράζουμε για 10-15 λεπτά, μέχρι το κριθαράκι να γίνει al dente. Αν χρειαστεί, προσθέτουμε λίγο επιπλέον νερό. Ρίχνουμε την κρέμα γάλακτος και ανακατεύουμε καλά. Προσθέτουμε το σπανάκι και συνεχίζουμε το μαγείρεμα για 1-2 λεπτά, μέχρι να μαραθεί. Αν η σάλτσα μας είναι πολύ πηχτή, την αραιώνουμε με λίγο επιπλέον νερό ή ζωμό. 4. Βαζουμε τις γαρίδες πίσω στο τηγάνι, προσθέτουμε τον χυμό και το ξύσμα λεμονιού και ανακατεύουμε. Τέλος, ρίχνουμε την παρμεζάνα. About last night at Nicosia's latest entry and hotspot at @ethimo_restaurant After weeks of seeing various stories on my social media, in a last minute decision with a group of friends, pulled some strings and managed to get an early 7:30 table at Ethimo! Place soon enough filled up by the time our appetizers started to arrive Its a simple menu, but all round great choices that everyone will definitely find something they would like. The main theme of the restaurant is Mediterranean cuisine, but saying that, don’t confuse it with other Mediterranean restaurants offering a mix of cuisines. Ethimo is Greek food at heart. Every dish had an element of greek flavors The must try dishes for me where the Tomatinia Salad! Yes a salad 🤯!!! The Mavros Xeiros, Wild Mushroom Manestra, Pitta stin Thraka and Trayana are instantly my favourites and will find it hard not to order again, but I do want to try more of the menu Final verdict : No it’s not the same as other restaurants, they have managed to pull of a menu that’s unique to them in a vibing environment with absolute great service! Now what a pleasant surprise @thetamediterranean was 😍 Located right next to the sea and a lighthouse, it's the most dreamy place I've been in Larnaca I've seen every single other influencer account visit this place, but no one seemed to catch the essence of this place which is the food. So just had to visit it for myself Saying that the vibe has been delivered through many posts on social media fantastically We decided to order various starters and mains to share as to try as many dishes possible The Hummous dip was definitely unique and something you won’t find anywhere else... Its a must We got 2 salads, the cherry tomatoes & strawberries and the homemade supermix salad. Would totally advise to try these We also got the spicy harrisa with avocado from the dip section. If not into spicy foods, you might want to try something else, but for us, we licked the plate clean with the bread as starter For cold dishes we got the Zucchini carpaccio with pistachio but since we got 2 salads we could’ve maybe skipped this and got a Ceviche instead. Nonetheless it was super tasty & refreshing For mains we got * Linguine with fresh fish tartare * Fried squid with spicy mayonnaise * Shrimps “saganaki” * Cuttlefish cooked in brown butter & miso All amazing but at this point I wanted to try the whole menu. The cuttlefish really stood out. New in Town is @olio_cy and boy was this a pleasant surprise. With views from Nicosia's 360 tower, overlooking Stasikratous street & the chilled atmosphere, well its this winters go to place 💯 I'm just goona talk about the show stopper in this post.... The steak!! Just look a it 🤤 cooked to perfection, and served with truffle oil that you sprinkle yourself with some herb stems. Two or more can share.... But next time Im having just for me, and then going straight to dessert. Again, just order all the desserts and share, it's more fun that way!
