Easy vegan Fish Pie Recipe using the flavorful, super crunchy Vegan Fish Fingers of @movingmountainsfoods
Ingredients:
▫️3 packs Moving Mountains Fish Fingers
▫️1kg potatoes, peeled and halved
▫️2 cups peas
▫️1 cup vegan cheddar cheese, grated
▫️1 1/2 cup soya milk
▫️3 tbsp vegan butter
▫️Salt, black pepper, nutmeg
▫️Spring onions, finely chopped
Steps:
1. Preheat oven to 200c, place the fish fingers (cook from frozen) into a a baking tray and bake for 15 minutes until golden brown.
2. Put the potatoes, peeled and halved, in a saucepan and pour over enough water to cover them. Bring to boil and then simmer until tender.
3. When cooked, drain thoroughly and mash them. Heat the milk and butter together and start adding it slowly and keep stirring, continue the process until all the milk is finished, add salt, pepper, nutmeg and vegan cheese.
3. In another pan cook your peas over a medium-high heat, add salt and pepper.
To Assemble:
On a medium baking tray start assembling the layers by adding the fish fingers to cover the bottom, add your peas and top with the mashed potatoes.
Spread some vegan cheese on top and place under grill for 5 minutes to melt and brown the cheese.
Sprinkle some spring onions and serve!
