As we all know by now, Athens is known for its incredible food - and the best part is that you can find great spots in almost every neighbourhood, even the ones that haven’t been blown up all over Instagram 👀 That’s exactly how we found this little gem - @metompardon in Pangrati. You can get everything you need to make this at @alphamegacy Υλικά: 150 γρ. ντοματίνια 1 κ.γ. ελαιόλαδο 1 σκελίδα σκόρδο, ψιλοκομμένη 1 μέτριο κρεμμύδι, ψιλοκομμένο 1 κ.σ. πελτέ ντομάτας 250 γρ. ζωμό λαχανικών 200 γρ. κριθαράκι 1 κ.σ. γιαούρτι ⅓ ποτηριού γραβιέρα Νάξου, τριμμένη 1 ποτήρι ψιλοκομμένο σπανάκι Αλάτι & πιπέρι Εκτέλεση: Σοτάρουμε το κρεμμύδι στο ελαιόλαδο, σε χαμηλή προς μέτρια φωτιά, για 2–3 λεπτά μέχρι να μαλακώσει. Προσθέτουμε τα ντοματίνια και ανακατεύουμε μέχρι να αρχίσουν να μαλακώνουν και αυτά. Προσθέτουμε το σκόρδο και τον πελτέ ντομάτας και ανακατεύουμε για λίγο. Στη συνέχεια, ρίχνουμε το κριθαράκι και ανακατεύουμε καλά. Προσθέτουμε τον ζωμό λαχανικών, αλατοπιπερώνουμε και αφήνουμε να μαγειρευτεί σε χαμηλή φωτιά μέχρι το κριθαράκι να είναι σχεδόν έτοιμο. Προσθέτουμε το ψιλοκομμένο σπανάκι και μαγειρεύουμε για ακόμη 2–3 λεπτά, μέχρι να μαλακώσει και να ψηθεί εντελώς το κριθαράκι. Αποσύρουμε από τη φωτιά και αφήνουμε για 1–2 λεπτά να κρυώσει ελαφρώς. Προσθέτουμε τη γραβιέρα Νάξου και το γιαούρτι και ανακατεύουμε καλά. Σερβίρουμε και απολαμβάνουμε!

Φέτα Σαγανάκι σε Φύλλο Κρούστας 🇬🇷 ΥΛΙΚΑ: ▫️ 1 ορθογώνιο κομμάτι φέτας, πάχους περίπου 1,5 εκ. ▫️ 1 φύλλο κρούστας ▫️ ελαιόλαδο, για το τηγάνισμα ▫️ μέλι, για το σερβίρισμα ▫️ καβουρδισμένο λευκό σουσάμι & μαυροσούσαμο, για γαρνίρισμα ΕΚΤΕΛΕΣΗ: 1. Κόβουμε ένα ορθογώνιο κομμάτι φέτας πάχους περίπου 1,5 εκ. και το τοποθετούμε σε απορροφητικό χαρτί για να στραγγίξει καλά. 2. Ανοίγουμε ένα φύλλο κρούστας και τοποθετούμε στο κέντρο τη φέτα. Διπλώνουμε το φύλλο ώστε να κλείσει σαν πακέτο, βρέχοντας ελαφρά τις άκρες με νερό για να κολλήσουν και να σφραγιστεί καλά. 3. Τυλίγουμε το πακέτο με μεμβράνη και το βάζουμε στο ψυγείο για 30 λεπτά, ώστε να σταθεροποιηθεί. 4. Ζεσταίνουμε ελαιόλαδο σε τηγάνι, σε μέτρια προς δυνατή φωτιά. Τοποθετούμε προσεκτικά το πακέτο φέτας και τηγανίζουμε μέχρι να ροδίσει ομοιόμορφα και από τις δύο πλευρές. 5. Athens friends… we have just found y(our) new go-to spot for paidakia 👀🔥 We headed to @to.koutouki.tou.marathoniti in Pangrati after seeing it recommended by @ikon5 - and let’s just say the hype was real (and yes, he happened to be there when we were too!). From the starters to the endless plates of meat, this place is the definition of a proper Greek taverna experience. If you’re used to making the classic pilgrimage to Stekki tou Ilia for paidakia… it might be time to expand the list. Trust us on this one - your Athens food map just got an upgrade. 🥩🍷
